Cleanliness

Machine cleanliness is very important because what you don't want is the taste of stale, used coffee grounds getting mixed in with your new basket of freshly roasted speciality coffee. Regularly remove the screw and shower head above the portafilter handle and thoroughly clean. The filter hand and filter baskets should also be kept exceptionally clean. Grinding & Tamping

One cannot underestimate the importance of a good grind and tamp. A perfect espresso shot should take between 18-23 seconds to pour from the moment you hit the button. Coffee grounds should be firmly and evenly tamped to achieve this time. If the shot is dispensed too quickly, adjust to a finer grind; if it pours too slowly, adjust to a coarser grind.
